1 Cup Butter0.5 Cup Powdered Sugar0.5 Teaspoon Peppermint Extract1.25 Cups All-Purpose Flour0.5 Cup Cornstarch2 Tablespoons Butter2 Tablespoons Milk0.25 Teaspoon Peppermint Extract1.5 Cup Powdered Sugar0.5 Cup Candy Canes Or Hard Peppermint CandyIn a stand mixer on medium speed, beat butter, powdered sugar and extract until creamy. In a large bowl, combine flour & cornstarch.Gradually add flour mixture to creamed mixture and beat at low speed until well mixed. Cover and refrigerate until dough is firm, at least 1 hour.Preheat oven to 350 degrees. Line 2 sheet pans with Silpat or parchment paper. Shape dough into 1-inch balls and arrange on prepared sheet pans at least 2 inches apart. Bake until cookie bottoms are lightly browned, about 10-12 minutes. Transfer cookies to wire racks to completely cool.Meanwhile, in the stand mixer, beat butter until fluffy. Add powdered sugar, milk and peppermint extract and beat until creamy & smooth. Spread over cooled cookies and sprinkle with crushed candy. Store in an airtight container.
