2 Pounds Pork Stew Meat1 Pound Dried Black-Eyed Peas0.75 Cup Beef Stock5 Medium Carrots4 Cups Water1 Teaspoon Salt & Freshly Ground Black Pepper1 Cup All-Purpose Flour2 Tablespoons Extra-Virgin Olive Oil0.25 Large Bunch Of Green OnionsIn a shallow bowl, mix together flour, salt & pepper, and redge the beef stew meat in the seasoned flour. Heat the oil in a cast iron skillet over medium heat, and brown the pork for about 10 minutes. Meanwhile, rinse and sort the black eyed peas to remove any stones. Combine the browned meat, black eye peas, stock, diced carrots and water. Cover and cook on low for 10 hours, or until the peas are tender.
Serve with steamed rice, and garnish with the diced green onions.
