Press the ice cream into the pan and smooth the top with a spatula. Freeze until solid, at least 1 hour. Meanwhile, preheat the oven to 350 degrees, and line 2 sheet trays with a silpat or sheets of parchment paper. Set aside. In a large bowl, sift the flour, cocoa and salt and set aside. In the bowl of a stand mixer on medium speed, add sugar and butter and cream until fluffy, about 1 minute. Add egg yolk and vanilla and mix until blended. Gradually add flour mixture and mix until just combined. Divide the dough into 2 pieces and form them into a 5-inch square. Wrap each square in plastic wrap and chill for at least 30 minutes. On a work surface lightly dusted with cocoa, place one dough square and a time and roll into a large rectangle. Use a ruler to cut along the side into 6 pieces that are 2 inches long. Cut each piece in half to make 12 cookies that are 4 X 2 inches. Transfer the cookies to the sheet trays, and with a fork or wooden skewer poke holes (about 15 or so) in each cookie. Bake for 10-12 minutes, rotating the pans halfway through. Allow to cool completly on wire cooling racks before assemblying the sandwiches. On a dry work surface, transfer ice cream and trim the edges to make a clean rectangle. Use the same technique for cutting the dough and make 12 ice cream rectangles and sandwich the icecream between 2 cookies.
