Arugula Pesto Chicken Recipe | PT15M Serves 4 Ingredients: 4 Cups Fresh Arugula Or Spinach 1 Cup Fresh Basil Leaves 0.25 Cup Pine Nuts 1 Clove Garlic 1.5 Teaspoon Sea Salt 0.25 Cup Plus 1 Tablespoon Olive Oil 1 Pound Rigatoni Pasta 1 Rotisserie Chicken 2 Plum Tomatoes 1 Teaspoon Freshly Ground Black Pepper 2 Tablespoons Parmesan Cheese In a food processor, process pine nuts, arugula, pine nuts, garlic, basil and 1 teaspoon of salt. Drizzle the 1/4 cup of olive oil in a constant stream while the motor is still running. Pulse until smooth mixture is formed. Heat remaining oil in a large skillet. Stir in chicken and pasta and sauté for about four minutes or until zucchini is tender. Turn the heat off, stir in pesto, tomatoes and remaining salt and pepper. Serve topped with parmesan along with a slotted spoon.
