Refrigerate overnight. Allow the chicken to rest at room temperature for at least 20 minutes before cooking.Meanwhile, in a large shallow dish, combine cornmeal, 1 1/2 cups flour, 1/4 teaspoon of salt and black pepper. Dredge the chicken with flour and spice mixture evenly and shake off any excess.In a large Dutch oven, heat 4 cups of oil over medium-high heat until it reaches 325 degrees. Deep-fry for about 20 minutes turning chicken occasionally. Transfer cooked chicken to a paper towel-lined plate to drain. Set aside.
