2 Medium Sweet Potatoes0.25 Medium Bunch Of Cilantro1 Tablespoon Extra-Virgin Olive Oil0.5 Medium Onion0.5 Medium Apple4 Cloves Garlic1 Cup Chickpeas0.5 Medium Bunch Of Kale2 Teaspoons Ras El Hanout Spice Blend0.5 Teaspoon Salt0.25 Teaspoon Freshly Ground Black Pepper2 Teaspoon Maple Syrup0.25 Cup ScallionsPreheat the oven to 400 degrees, and roast the potatoes for 45 minutes or until tender.Meanwhile, heat the olive oil in medium cast iron skillet over medium-high heat and saute the onions and apples for about 5 minutes or until the onions just start to soften.Lower the heat to medium, and stir in the garlic, chickpeas, spices and saute for another 5 minutes. Stir in the chopped kale and the minced cilantro and saute for another 5 minutes.Garnish with the scallions and a drizzle of the maple syrup.
