1.25 Cups Vegetable Oil2 Cups Sugar4 Large Eggs2 Cups All-Purpose Flour1 Teaspoon Baking Soda1 Teaspoon Baking Powder1 Teaspoon Salt1 Tablespoon Ground Cinnamon2 Large Oranges6 Medium Carrots1.25 Cups Walnuts1 Cup Dulce De LechePreheat oven to 350 degrees. Grease a 9X13 cake pan with cooking spray.In the bowl of a stand mixer, beat oil and sugar until combined. Add eggs one at a time until blended.In a large bowl, mix the flour, baking soda, baking powder, salt, and cinnamon.Fold the egg mixture into the flour mixture until combined. Add orange zest, carrots and 1 cup of walnuts. Mix well.Pour the batter into the cake pan and bake for 1 hour, until a toothpick inserted in the center comes out clean. Allow cake to cool.Cut cake into 12 equal squares. In 4 deep dessert cups, arrange one cake square and drizzle with 1 tablespoon Leche.
