4 Tablespoons Butter2 Day-Old Bread Slices15 Ounces Bing Pitted Cherries2.5 Teaspoons Cornstarch1.5 Teaspoon Sugar0.5 Teaspoon Vanilla Extract0.25 Teaspoon Almond Extract0 Whipped Cream & Fresh MintIn a medium skillet, melt 2 tablespoons of butter and cook bread cubes until browned, stirring continuously. Remove from heat and keep aside. Through a strainer, strain syrup from cherries into a medium pan. Stir in remaining butter, cornstarch, sugar and both extracts and bring to a boil. Boil for about 2 minutes, stirring continuously. Remove from heat and keep aside to cool slightly. After cooling, stir in cherries. Divided bread cubes into 2 serving dishes evenly and top with cherry mixture. Serve with the topping of whipped cream and mint.
