2 cloves Garlic1 bunch Flat Leaf Parsley4 tablespoons Salted Butter0.25 teaspoon Salt & Freshly Ground Black Pepper2 n/a Pork Tenderloins2 tablespoons Extra-Virgin Olive Oil1 small Bunch Fresh Thyme SprigsPreheat oven to 375 degrees. Preheat a large cast-iron skillet on the stove over medium-high heat.In a small bowl, garlic, parsley, and butter and stir until combined. Set aside.Drizzle oil over the meat and season with salt & pepper. Rub all sides of the tenderloins to completely coat with seasoning. Place in hot skillet and sear meat golden brown on all sides, about 7 minutes. Remove from heat to cool a bit.Use a meat brush to coat tenderloins generously with garlic butter. Place skillet in the oven and roast until a meat thermometer inserted in the middle of each tenderloin registers 145 degrees, about 35-40 minutes.Remove from the oven and transfer pork to a cutting board. Allow meat to rest at least 10 minutes before carving. Garnish with sprigs of the thyme.
