Ingredients:
3 Cups All-Purpose Flour2 Large Eggs4 Large Egg Yolks1.5 Teaspoon Salt2 Tablespoons Water8 Cups Chicken StockOn a smooth surface, shape flour into a mound and create a well in the center. Add eggs, yolks, salt and water in the well and mix with a fork until it forms a dough. Lightly flour the work surface and knead dough until smooth and elastic, about 5 minutes. Pat dough into a rectangle and cover tightly with plastic wrap. Refrigerate dough for at least 6 hours or overnight.Cut dough ball into 2 even halves. On a well- floured surface with a flour-coated rolling pin, roll first half at least 1/4-inch thick. With a sharp knife or pizza wheel, slice dough into uniform noodles about 1/4-inch wide. Toss noodles gently in flour and place on a drying rack until ready to cook. Repeat process with second half of dough.In a stockpot over medium-high heat, bring stock and remainder of salt to boil. Add noodles and cook until tender, about 12-15 minutes. Drain in a colander and serve hot.
