6 Large Egg Yolks0.33 Cup Granulated Sugar0.75 Cup Marsala1 Small Lemon0.125 Teaspoon Ground Cinnamon0.125 Teaspoon Vanilla Extact4 Cups Water1 Cup Heavy Whipping CreamIn a large stainless-steel bowl, add egg yolks, sugar, zest, cinnamon, vanilla, and wine.In a large saucepan over medium-high heat, add water and bring it to a boil. Reduce the heat to low and allow the water to simmer (not boil). Set the bowl of egg mixture over the water without the bottom of the bowl touching it. Use a whisk to beat mixture until it is light & fluffy, about 10 minutes. Whisk an additional 2 minutes to thicken the custard more. Set aside for 15 minutes to cool.In a stand mixer on high speed, add heavy cream and beat until it forms soft peaks. Use a spatula to fold 1 cup whipped cream into the custard until it is incorporated. Spoon custard into dessert glasses and top with remaining whipped cream.
