Arrange a rack in the middle of the oven. In 2 (6-ounce) ramekins, place pats of cold butter, some sugar and cocoa powder. Shake each ramekin to coat the bottom and sides with sugar and cocoa powder.In the double boiler, add cream, softened butter, and 6-ounces of chocolate and heat until melted, stirring occasionally. Remove from heat and stir well. Add egg yolks and beat until well combined. In a medium bowl, add egg whites and cream of tartar and beat until soft peaks form. Add sugar and beat until stiff peaks form. Slowly, fold egg white mixture into chocolate mixture.Place the mixture into prepared ramekins evenly about 3/4 of the way up. Arrange ramekins into a baking dish and bake for about 15 minutes. Remove from oven and dust with powdered sugar. Serve immediately with the garnishing of berries.
