Place Brussels sprouts in steamer and cook, covered for about 4 minutes. Drain well and immediately, transfer Brussels sprouts to a large bowl of ice water to cool for about 1 minute. Drain well and with paper towels, pat dry. Cut each Brussels sprout in half vertically, right through the core. In a large cast-iron skillet, heat oil over high heat. Reduce heat to medium and add pancetta and cook until it begins to brown, stirring occasionally. Stir in garlic and cook for about 30 seconds.
