In a large cast-iron skillet over medium-low heat, heat oil and add onions and 1/4 teaspoon salt. Cover and occasionally stir until onions are slightly tender, about 10 minutes. Increase heat to medium-high and saute onions until golden brown, about 10 more minutes. Stir in thyme and cook for another minute. Transfer to a medium bowl and set aside. In a large casserole dish, coat with butter and set aside. Heat a saucepan over medium-high heat, and add the heavy cream & milk and bring to a boil. Stir in the potatoes, apples and remaining salt. Cook, partially covered until potatoes are just tender, about 12-15 minutes. Stir occasionally so potatoes do not stick. In the prepared casserole dish, spoon 1/3 of the potato & apple mixture and top with 1/2 of the onions. Repeat and top with a layer of remaining potatoes & onions. Pour any remaining cream over the mixture. Place dish on a sheet pan and bake until the mixture is bubbly and the top is golden brown, about 30 minutes.
