8 Ounces Rice Noodles0.5 Pounds Chicken Breasts3 Cloves Garlic0.25 Cup Carrot Or Cabbage1 Egg0.33 Cup Peanuts Or Cashews2 Green Onions2 Cups Fresh Bean Sprouts1 Handful Fresh Basil0.25 Cup Unsalted Dry-Roasted Peanuts2 Tablespoons Vegetable Oil0.33 Cup Chicken Stock1 Tablespoon Soy Sauce2 Tablespoons Fish Sauce2 Tablespoons Lime Juice3 Tablespoons Brown SugarIn a pan of boiling water, cook rice noodles until al dente. Drain noodles and rinse under cold running water.For sauce: In a bowl, add chicken stock, soy sauce, fish sauce, lime juice and brown sugar and beat until well combined.In a large bowl, add chicken and 2 tablespoons of sauce and mix well.In a large non-stick frying pan, heat oil over medium-high heat and stir fry garlic for about 1 minute. Add chicken and stir-fry for about 2 minutes. Add carrot and stir-fry a little.With a spoon, push ingredients aside. Carefully, crack the egg in the center of the pan and cook until scrambled, stirring continuously.Add noodles and ¼ of sauce and stir-fry for about 30 seconds. Slowly, add sauce and stir-fry until most of the sauce has been used. Add bean sprouts and stir-fry for about 2-3 minutes.Serve immediately with the topping of spring onion, fresh basil and nuts.
