3 Tablespoons Olive Oil2 Large Boneless & Skinless Chicken Breasts1 Pound Andouille Sausage3 Medium Bell Peppers2 Medium Stalks of Celery1 Medium Jalapeno1 Medium White Onion4 Cloves Garlic14 Ounces Crushed Tomatoes4 Cups Chicken Stock1.5 Cups Long Grain White Rice2 Tablespoons Cajun Or Creole Seasoning1 Teaspoon Dried Thyme0.25 Teaspoon Cayenne Pepper1 Bay Leaf1 Pound Large Shrimp15 Small Okra Pods2 Teaspoons Kosher Salt1 Teaspoon Freshly Ground Black Pepper0.25 Medium Bunch Of Green Onions0.5 Cup Fresh ParsleyIn a Dutch oven over medium-high heat, heat 1 tablespoon oil and stir in the chicken & sausage. Saute until chicken is cooked through and sausage in browned, about 8 minutes. Transfer to a plate lined with paper towels to drain. Set aside.In the same Dutch oven, heat remaining oil and add diced bell peppers, celery, jalapeno, onion, and garlic. Saute until the onions are soft and translucent, about 5 minutes.Add the tomatoes, stock, rice, seasoning, thyme, cayenne, bay leaf and reserved sausage and chicken. Stir well until combined. Heat until the mixture until it reaches a simmer, redudce the heat to low, and cook covered for 25-30 minutes or until the rice is tender. Discard the bay leaf. Add the shrimp and okra and stir to combine. Continue to simmer, stirring occasionally, until the shrimp are cooked through and just starting to turn pink about 5 minutes. Season with salt & pepper. Garnish with the green onions and parsley.
