2 Cups Heavy Whipping Cream0.5 Cup Whole Milk5 Ounces Semi-Sweet Chocolate6 Large Egg Yolks0.33 Cup SugarPreheat oven to 325 degrees.In a medium saucepan over medium-high heat, add milk and bring to a simmer. Remove from heat and add the chocolate, whisking until melted & smooth.In a large bowl, add egg yolks and sugar and whisk until blended. Gradually whisk in the chocolate mixture. In another large bowl, strain the mixture and allow it cool about 10 minutes. Skim any foam from the surface.In 6 ramekins, divide the mixture evenly and cover each with a sheet of aluminum foil. Transfer ramekins to a large baking pan and add enough hot water to come halfway up the sides of the ramekins.Place in the oven and bake until the custards are set but the centers wobble slightly when shaken gently, about 60 minutes. Remove the foil and refrigerate custards until chilled, about 3 hours.
