Smart Recipes, American Recipes, Beef,Dairy Recipes, Recipes Beef,Dairy American Philadelphia Style Steak Philadelphia Style Steak Recipe | PT1H20M Serves 4 Ingredients: 2 Tablespoons Ancho Chile Powder 4 Strip Steaks 2 Teaspoons Spanish Paprika 2 Teaspoons Ground Cumin 2 Teaspoons Ground Coriander 2 Teaspoons Dry Mustard 2 Teaspoons Dried Oregano 2 Tablespoons Kosher Salt 1.5 Teaspoons Ground Black Pepper 3 Tablespoons Unsalted Butter 3 Tablespoons Canola Oil 3 Large Spanish Onions 1 Tablespoon All-Purpose Flour 2 Cups Aged Provolone Cheese 2 Cups Whole Milk 0.25 Cup Parmigiano Reggiano 0.25 Cup Dijon Mustard 0.25 Cup Whole Grain Mustard 0.25 Cup Molasses 3 Tablespoons Prepared Horseradish 2 Tablespoons Honey 2 Tablespoons Ketchup 0 Fresh Flat-Leaf Parsley For spices blend: In a bowl, mix together Chile powder, paprika, cumin, coriander, dry mustard, oregano, 1 teaspoons of salt, 1 teaspoons of black pepper. For caramelized onions: In a large sauté pan, heat oil and 2 tablespoons of butter over medium heat and cook onions, 1 teaspoons of salt and ¼ teaspoon of black pepper for about 30-40 minutes, stirring occasionally. Meanwhile, for provolone sauce: In a medium pan, melt butter over medium heat. Add flour, beating continuously and cook for about 1 minute. Slowly, add warm milk, beating continuously until well combined. Cook for about 4-5 minutes with constant stirring. Remove from heat and, add provolone and parmesan, beating continuously until well combined. Season with 1 teaspoon of salt and ¼ teaspoon of black pepper and keep aside. For steak sauce: In a bowl, add Dijon mustard, whole grain mustard, molasses, horseradish, honey, ketchup and a little salt and black pepper and beat until well combined. Keep aside. Preheat the broiler to the oven. Season steaks with 1 1/2 tablespoons of salt evenly. Rub one side of each steak with spice rub. Arrange steaks on a broiler pan, rub-side up and drizzle with 2 tablespoons of oil. Broil steaks for about 5-6 minutes. Flip steaks and broil for about 6-7 minutes. Remove from oven and keep aside for about 5 minutes before serving. Divide provolone sauce onto serving plates and top with steaks, followed by caramelized onions and steak sauce. Garnish with parsley and serve.
