3.33 Cups All-Purpose Flour Plus Extra For Rolling2 Teaspoons Baking Powder0.5 Teaspoon Fine Salt1.5 Cups Sugar1.5 Tablespoon Apple Pie Spice2 Large Eggs3 Tablespoons Margarine0.5 Teaspoon Lemon Zest0.66 Cup Seltzer Water0 Vegetable OilIn a bowl, mix together flour, baking powder, 1 cup of sugar, 1/2 teaspoon of apple pie spice and salt. In a shallow dish, mix together remaining 1/2 cup of sugar and 1 tablespoon of apple pie spice.In another bowl, add shortening, eggs, 1/2 cup seltzer water and lemon zest and beat until smooth. Add flour mixture and mix until just combined. Slowly, add remaining seltzer water, 1 teaspoon at a time and mix until just a soft and shaggy ball-like dough is formed.Place dough onto a generously floured surface and sprinkle with some flour. With your hands, pat dough into 3/8-inch thickness. With a 3-inch round biscuit cutter, cut donuts and then with a 1-inch round cutter, cut hole in each donut. In a heavy-bottomed pan, heat about 2-inch of vegetable oil over medium-high heat and fry donuts in batches for about 2-3 minutes, flipping occasionally. Transfer donuts onto a paper towel lined baking sheet to drain. Keep aside to cool slightly. Coat warm donuts with spiced sugar and serve.
