Meanwhile, season the chicken with the sage, 1/2 teaspoon of salt & pepper and set aside. In a large cast iron skillet over medium-high heat, heat 2 tablespoons oil and brown the chicken for 4 minutes per side, and transfer to a plate, and tent with a sheet of aliminum foil. Reduce heat to medium and add the remaining oil. Arrange the potatoes in a single layer, and season with the remaining salt and pepper, cook for 4 minutes per side. Stir in the spinach and minced garlic, stirring frequently, and continue to cook until the spinach is just wilted about 2 minutes. Arrange the browned chicken in a single layer over the spinach and poatoto mixture, and top each breast with a slice of prosciutto. Sprinkle the shredded cheese over the surface of the chicken, and bake in the preheated oven until the cheese is melted & bubbly.
