Remove from heat and set aside. On a floured work surface, divide dough into 4 equal pieces and roll each into a circle. Place 2 circles on each prepared sheet pan. On the bottom half of each circle, spread 1/4 cup pizza sauce and top with 1/4 cup each of ricotta, Parmesan, mozzarella cheese, and tomatoes. Season each with 1/4 teaspoon salt & pepper. Add 1/4 cup of basil and drizzle with 1 tablespoon balsamic glaze. Gently fold each calzone into a half circle and press down the edges. Roll edges uptight and use a fork to seal. Brush with remaining olive oil and use the tip of a knife to make 2 steam slits in each calzone. Bake until crust is golden brown & crispy, about 15 minutes.
