Ingredients:
1 Cup Pomegranate Juice1 Tablespoon Balsamic Vinegar1.5 Tablespoons Orange Zest1 Tablespoon Agave Syrup1 Small Shallot0.125 Teaspoon Stone-Ground Mustard0.5 Cup Extra-Virgin Olive Oil0.5 Teaspoon Salt & Ground Black Pepper8 Cups Fresh Baby Spinach0.75 Cup Red Onion2 Cups Watermelon6 Ounces Fresh Raspberries0.5 Cup Pomegranate SeedsFor dressing: In a small pan, add pomegranate juice over medium-high heat and cook until reduces into about 3 tablespoons of thick syrup. Remove from heat and keep aside to cool. Add orange zest, shallot, vinegar, agave syrup, mustard, oil, salt and black pepper and beat until well combined. In the bottom of a large salad bowl, place spinach and top with onion, watermelon, raspberries and pomegranate seeds. Drizzle with dressing and serve immediately.
